Description
Macarons are a Parisian treat popular with tourists and locals alike. Unlike the American macaroon, the Paris macaron, also known as a gerbet or Luxemburgerli, is not made from coconut. Rather, it is a sweet meringue-based confection comprised of ganache, buttercream or jam filling in a wide variety of wonderful flavors (raspberry, pistachio, and salted caramel, to name a few) sandwiched between two almond-flavored biscuits.
The name of these delightful pastries is derived from the Italian word macarone (or maccarone or maccherone), the Italian meringue.
According to wikipedia, Pierre Desfontaines, of the famous French patisserie Laduree, is sometimes credited with the creation of these culinary delights, although another baker, Claude Gerbet, also claims to have invented them. Whoever we have to thank, we most certainly do!
